Rosso Bruno™ Parmesan-Crusted Delight
Yields 4 servings (1 serving=2 tomato halves)

Ingredients:

  • 1 Tbsp Olive oil (to oil baking pan)
  • 4 Dulcinea® Rosso Bruno™ Premium Vine-Fresh tomatoes, cut in half
  • 3/4 Cups Panko bread crumbs, (found in the Asian section of most supermarkets)
  • 1/2 tsp Fresh cracked black pepper
  • 1 tsp Lemon zest, grated
  • 2 Tbsps Butter, melted
  • 4 Tbsps Parmesan cheese, grated

Directions:

Preheat oven to 400 degrees. Lightly oil an 8” x 8” baking pan with olive oil. Arrange tomato halves cut side up in the baking dish. In a medium bowl, toss the bread crumbs with the pepper, lemon zest, melted butter and Parmesan cheese until well blended. Sprinkle each tomato half with the crumb mixture, and bake for 20-25 minutes until crumbs are golden brown. Serve as a side dish with steak or chicken. For a different flavor, try adding 1 teaspoon of Italian herbs in place of the lemon zest.
