Watermelon Minted Popsicles
Yields 12 servings (depending upon size of ice cube tray)
Ingredients:
- 4 cups (1/2-inch cubes) Dulcinea® PureHeart® watermelon
- 2 tablespoons sugar
- Pinch salt
- 1/4 cup chopped mint leaves, lightly packed
- Sticks for popsicles
Directions:
- In blender combine watermelon, sugar and salt.
- Blend to puree.
- Stir in mint.
- Pour into silicon ice cube trays.
- Freeze for 1-1/2 hours.
- Insert sticks and freeze until solid, about 3 hours.
