Baked Rosso Bruno Tomatoes with Crunchy Parmesan Crust
Serves:
4 (serving = 2 tomato halves)
Ingredients
- 1 T Olive oil (to oil baking pan)
- 4 DULCINEA™ Rosso Bruno Premium Vine-Fresh
tomatoes, cut in half
- 3/4 Cup Panko bread crumbs (found in the Asian
section of most supermarkets)
- 1/2 t Fresh cracked black pepper
- 1 t Lemon zest, grated
- 2 T Butter, melted
- 4 T Parmesan cheese, grated
Preparation
- Preheat oven to 400 degrees.
- Lightly oil a 8” x 8” baking pan with
olive oil.
- Arrange tomato halves cut side up in the baking
dish.
- In a medium bowl, toss the bread crumbs with the
pepper, lemon zest, melted butter and Parmesan cheese
until well blended.
- Sprinkle each tomato half with the crumb mixture,
and bake for 20-25 minutes until crumbs are golden
brown.
- Serve as a side dish with steak or chicken.
Tips
and Serving Suggestions
- For a different flavor, try adding 1 teaspoon
of Italian herbs in place of the lemon zest.
