Baked Rosso Bruno Tomatoes with Crunchy Parmesan Crust
Serves: 4 (serving = 2 tomato halves)

Ingredients

  • 1 T Olive oil (to oil baking pan)
  • 4 DULCINEA™ Rosso Bruno Premium Vine-Fresh tomatoes, cut in half
  • 3/4 Cup Panko bread crumbs (found in the Asian section of most supermarkets)
  • 1/2 t Fresh cracked black pepper
  • 1 t Lemon zest, grated
  • 2 T Butter, melted
  • 4 T Parmesan cheese, grated

Preparation

  • Preheat oven to 400 degrees.
  • Lightly oil a 8” x 8” baking pan with olive oil.
  • Arrange tomato halves cut side up in the baking dish.
  • In a medium bowl, toss the bread crumbs with the pepper, lemon zest, melted butter and Parmesan cheese until well blended.
  • Sprinkle each tomato half with the crumb mixture, and bake for 20-25 minutes until crumbs are golden brown.
  • Serve as a side dish with steak or chicken.

Tips and Serving Suggestions

  • For a different flavor, try adding 1 teaspoon of Italian herbs in place of the lemon zest.
