Fluffy Tuscan-Style™ Cheesecake Cups
Makes 6 servings
Ingredients:
- 1 (8 ounce) block 1/3 less fat Neufchatel cheese, at room temperature
- 2 cups whipped topping, thawed
- 1 teaspoon coconut or pineapple extract
- 6 miniature graham cracker crusts
- 1 Dulcinea Tuscan-Style™ Cantaloupe, seeded and cubed
- Pastel cake sprinkles, chocolate covered sunflower seeds, chopped toasted nuts and/or toasted coconut
Directions:
- Place cream cheese in a large mixing bowl and beat with an electric mixer until fluffy.
- Add whipped topping and extract to the bowl.
- Very carefully stir ingredients together with a rubber spatula.
- Spoon into graham cracker shells and top with cantaloupe cubes.
- Add decorative sprinkles or topping of choice and serve.
