Fluffy Tuscan-Style™ Cheesecake Cups
Fluffy Tuscan-Style™ Cheesecake Cups
Makes 6 servings

Ingredients:

  • 1 (8 ounce) block 1/3 less fat Neufchatel cheese, at room temperature
  • 2 cups whipped topping, thawed
  • 1 teaspoon coconut or pineapple extract
  • 6 miniature graham cracker crusts
  • 1 Dulcinea Tuscan-Style™ Cantaloupe, seeded and cubed
  • Pastel cake sprinkles, chocolate covered sunflower seeds, chopped toasted nuts and/or toasted coconut

Directions:

  • Place cream cheese in a large mixing bowl and beat with an electric mixer until fluffy.
  • Add whipped topping and extract to the bowl.
  • Very carefully stir ingredients together with a rubber spatula.
  • Spoon into graham cracker shells and top with cantaloupe cubes.
  • Add decorative sprinkles or topping of choice and serve.
